Liquor for pie and mash:-
25 g Butter (1 oz)
25 g Plain flour (1 oz)
300 ml Water (10 fl oz)
4 Tablespoon Chopped fresh parsley
Salt and freshly ground pepper
1 Teaspoon Malt vinegar, optional - but should be in it to be a 'propa 'sos . .
Melt butter in a saucepan, add flour and cook for 1 minute.
Gradually add water (could use a chicken stock). Bring to the boil, stirring continuously. Add parsley and season and add vinegar if using. (course you are . . . )
Serve over pie and eel, a good mash potato, minced beef pie etc. etc
