This just looks overly processed to me. We all know that processed foods are extremely low in essential nutrients compared to whole unprocessed foods.

Most transition foods for veggies and vegans are overly processed. Just because they don't contain meat doesn't mean they're healthy.

The nutrients will depend on what the mince is made of. Quorn is made from a myco protein that comes from a mushroom or fungus if I'm not mistaken. Soy products are also used a lot in manufactured products. There has been debate about how safe it is based on its effect on, I think, hormones but that is inconclusive.
