Fresh peach ice cream
Ingredients:
5 - 6 very ripe peaches
juice of ½ a lemon
3 oz. (85 g.) caster sugar
½ pint (300 ml.) double cream
Method:
Peel the peaches after they have soaked for about two minutes in hot water. Remove stones and chop the flesh. Add the sugar and lemon juice and mash everything together. Allow to stand for 30 minutes, then stir in the cream. Place in a tray and freeze, beating occasionally with a fork to break ice crystals.
