egg fried rice?

does anyone know how to make egg fried rice?
i know it is rice, egg, soy sauce and sometimes onion.
is there anything else?

i have tried different recipes, they all taste alright but end up being stodgy.

what am i doing wrong?

cook the egg first in the wok, and scramble it well ...

remove and add it back to the rice at the end.

If you put the raw egg in the rice, it will go stodgy
I do a slightly different version cameo. Cook and drain your rice (you can even keep it in fridge for the next day). Make a one or two-egg omlette (one egg should do 2 servings). Reheat the rice in a little oil, onion if you wish. Chop up the omlette (flop it onto a chopping board first) and carefully stir into hot rice. Add soy sauce.
Always fry rice when it's cold, otherwise it'll definitely end up stodgy.

Two options -

Scramble the egg into the frying rice so the heat of the rice sets the egg

Or cook a one egg omlette - use a large pan so the omlette is thin - and when done, slice into very narrow strips and lay over the cooked rice dish.
