I only like melted cheese as in lasagne, bolognese etc. But when I do eat it I like it to be strongish.

What cheese is strong - eg is Mozzarella strong. Thanks

No mozzarella is very mild
Try buying cheddar that states seriously strong or vintage on the packet

I have bought Mature Cheddar once but thought it was too strong.

medium

strong
very strong

I adore a cheese that bites me back, I was recently bought Black Bomber Mature from Snowdonia - I wouldn't have shared with anyone.
We’ve had that one mamy, it’s gorgeous.
Another is the Lancashire Cheese Bomb, well worth a go.
Aldi do a really nice Vintage Cheddar that comes in a black wrapper. It's like a really mature crunchy cheddar.
Has anyone tried Tickler? So tasty and moorish.
Also, David Stow is another yummie one.
I like a really nice soft, ripe, blue-veined goat's cheese
Blue cheeses tend to be stronger. I like Shropshire Blue - but only in small doses!
Marks and Spencer Cornish Cruncher is a lovely strong cheddar
Shropshire Blue for me, too...much better than Stilton (IMO).
Proper Stilton, preferably one visited by a bottle of decent port.

jenny, you could always add some hard grated cheese to your cooking to give the food a lift. Parmigiano Reggiano for instance.

I like any strong cheese...the "cruncher" types are always good. Stinky camembert, also creamy blues like cambozola, and Montagnolo affine.

choux - I do put the hard cheese in - even tho I'm bumming LOL - I do make a lovely lasagne - have used the cheddar.

I do make loads so I can freeze some but usually when I do - it never gets to the freezer as it is consumed every day.

My husband said it was the best cheese he's ever had...
