never eaten it - turned it down in Guangzhou where the head of the power company had invited me out to dine on a boat floating in the Pearl River - the chef comes out to the boat obviously. We went around the fish+ stalls first and water rats were on offer. Managed to distract him but had to compromise on hedgehogs....
Which weren't bad - served as a potage and peppery in taste, one could say quite sharp.....
snake etc, the gall bladder flicked out and into a glass with mao tai and then, to follow, the blood into another glass with more mao tai, snake skin, the meat stir-fried with bamboo shoots etc and a final soup from the cartilage are all fairly common in Hangzhou and other restaurants in winter - the meat supposedly keeps one warm.
