With 'would of' and 'could of' even after being told?

"Would of" etc. is not a dialect thing nor is it language evolution. It is simply grammatically incorrect.

"Would", "should" and "could" are examples of modal verbs. These are auxilliary verbs used alongside the main verb in a sentence. They are used where a possibilty is being described. An example of why following them with "of" is incorrect (and silly) is easy to construct. Consider these two statements:

"I have been injured" [and have a broken leg].

"I could have been injured" [but was not].

The second modifies the first by describing a possibilty. Nobody would say "I of been injured." So saying "I could of been injured" is wrong. 

It's simply down to poor education. End of (as the saying goes).

I think it's very rude and unkind to comment on people's grammar or spelling on a forum.
We've all had different levels of education and can struggle with many different subjects, it really doesn't help a persons confidence to pick them up about it on a public forum, it's not an English exam.

I doubt many people would correct someone's grammar if they were standing chatting to them in a pub or somewhere.
