Mallyh;  you should take it out of the fridge and eat it. It's meant to be eaten, not kept as an heirloom. If you don't like it, then avoid buying it again.

mallyh; why not take it out of the fridge and leave it in the garage wrapped in a plastic bag? If you've never met camembert before this must all be a mystery to you. If you hate it, then avoid it in future.

The smellier the better IMHO. Not ammonia though.Baked in the oven and sprinkled with dried Thyme and olive oil. Slurp up with crusty bread.Sadly too filling for me as a starter these days

Ripe Camembert - I always wondered why French fridges smelled different until I moved there.  Wonderful stuff, if treated properly.  You learn to judge when to leave it out of the fridgeto ripen - yes it is a bit pongy, but it needs to be!

Having lived in France I know that the French test Camemberts by squeezing them with their thumbs, - I think that may be why the cheese is traditionally wrapped in greaseproof paper.

There was once (maybe still) a joke Camembert which looked authentic but it was made of some sort of rubber material with a squeaker in it to alarm the squeezer. 😄
