Why Dont Characters In Tv Dramas Act And Do What Normal People Would Do?

My wife and I when watching these dramas are always saying stuff like " why didn't she just phone the police or why did he do that or why didn't he just tell them or leave a tale half told"? Things to that effect. Why cant the writers make the characters act in a more normal way? If you know what I mean!

Sat at the table for family meal but nobody actually eats anything,  just pushes food around on their plate.

Or whenever they're on the phone they finish talking and then just hang up! They never say Bye, or anything, just end the call suddenly. Drives me mad lol.
