I make it with cold potatoes and leftover greens or peas. If you have cold mashed potatoes all the better.Otherwise I melt a knob of butter in a non stick pan .Then mash the greens and potato together.Season well with salt and black pepper .Get it nice and hot and then form it into one large flat round or several small ones. .Fry until crisp on one side flip it over and crisp the other side.Sometimes I add chopped bacon and onion.
i tend to make this in advance by cooking extra mash & veggies e.g. when we have a sunday dinner. mash everything together, let it go cold and leave in the fridge overnight. this is really good with smoked bacon and mushrooms for a quick tea. the only thing i wouldn't recommend putting in it is onion - it doesn't keep well.
I find it best when you have cooked a lamb sunday lunch
useing some of the dripping to fry it in and some of the meat if there is any left, I find bacon and onions to strong and take the genuine taste of bubble and squeek away
