loopy - if you make extra, you can make my favorite wrap for the next day's lunch! I take the leftover salmon - crumble it up like tuna - add a little olive oil and mayo, chopped onions, chopped garlic, dry Italian Seasoning - anything you like in tuna salad will work in this - cover and leave in the fridge overnight - makes a great wrap or even topping for a green salad. Waaay better than tuna:)
Pepper Crusted Maple Glazed Salmon
3/4 cup maple syrup
1/4 cup soya sauce
4 salmon fillets about 6 ounces each skin removed
1/4 cup cracked black pepper
vegetable oil
Mix together the maple syrup and soya sauce. Pour marinade into large resealable bag ( i use a dish ) and add fillets. Let sit in the fridge minimum 4 hours but ideally 24. Turn salmon every few hours
I dont use the pepper but if you want
Place pepper on plate, pat top side into pepper. Grill fillets pepper side up for about 6 minutes turning once halfway through cooking time.
The longer the salmon marinates the better it is ( up to 48 hours )
