fresh pineapple

Having skinned and cubed a fresh pineapple and placed cubes in sealed plastic containers can I then put one of the containers in the freezer as there is too much to consume within 2 days as stated on the product label, the label also states do not refrigerate...I don't think I can sell half a fresh pineapple on Ebay..thanks in anticipation ~ steelkneesteve

Although we've never frozen any, this is what the Dole Pineapple site offers:
Can I freeze DOLE Fresh Pineapple?
We do not recommend freezing fresh pineapple because it tends to lose some of its flavor. If you must freeze the pineapple for storage purposes, it can be cut and stored in an airtight plastic bag or container in its juice or syrup for up to 3 months.

If I were going to try it, I'd add a little of the syrup from a can of pineapple to help maintain some flavor as the above site suggests...
You can shove fresh pineapple on the fridge and it will keep perfectly OK for up to a week - just eat and enjoy. There are far too many namby-pamby labels around telling us how quickly things need to be eaten - it's often just a marketing con to get us to buy more.
