My dog has his food and his tipbits but never chocolate, but he loves cheese. He can smell it a mile away. He straight to the kitchen for a piece when ever I get it out. He can't get enough.
What I would like to know is am I damaging his health in any way but giving him a lump when ever I useing it.

I wasn't aware that dogs are not supposed to have dairy products.
My husband gives him wheat a bics in milk and egg as he used to with his old Alsatian. He also gave his old dog veggies with his meat and the odd gin and tonic. The dog lived until the age of 14, which some people have said is a good age for an Alsatian(sorry if thats the wrong spelling).
My mum used to give her old dog chocolate and she lived to 15.
My dog will not eat canned dog food. He only ever eats dry dog food with plenty of water.
But as I said he does love his cheese and yes Wig so do I.

Cheese is ok provided it is fed in moderation - as a titbit rather than as a main component of the dog's food. As with most things, moderation is the key - no more than 10% of the dog's total food for one day. I often use cheese for training for the show ring, because as you say they can smell it a mile off, and it keeps their attention on the pocket where it is kept. Just have to remember to remove it at the end of the session, or I end up with the pocket chewed out, or a smelly, gooey mess when it gets left for a few days before being washed.
My Shaney loves a bit of cheese .....I only give him a very thin little slice though as his evening treat. Every night I do my son his pack up for work which is always cheese (don't ask ! ) .
Old Shaney is arthritic now and going a bit blind and dead to the world in his basket .... but the second that fridge door opens and I mention the word cheese ... he's like lightning !
