Cheese & Onion Pie.

How do you make the perfect cheese & onion pie, What type of cheese? do you pre cook the onions? is there anything else needs adding.

Just had one tonight.
1 lb onoins, sliced & boiled for 10 mins then drained
� lb good cheddar, grated.
Freshly ground black pepper.
Short pastry
Line a pie dish with pastry add all the ingredients which have been mixed together, top it off with pastry, glaze with beaten egg & cook for 25 mins.
