I know I'm a bit late but I just found this! White wine shouln't really be kept in the fridge for that long - mainly because it just kills the wine. Remember wine is a living organism so it should be treated with respect and looked after 'til you're ready to drink it . Keep it in a nice cool, dark place - under the stairs, coat cupboard, the garage. Then when you're thinking about having it, put it in the fridge for an hour to bring it down to temp,. Domestic fridges are too cold for white wines too! You need to still be able to get the aroma of the fruit - if it's too cold you wont be able to smell it. If you're wondering whether a white has gone off you can usually tell by the colour - it can start to go a bit yellow and you may get some cloudiness. You may also notice that it doesn't look as full as it should - that may show that air is starting to get through the shrinking cork (especially if it has been standing up). A good way to make a not-so-decent wine taste better is - open the bottle, put a very fine seive over a jug and pour the wine from as high as you can through the seive to aerate it (you know like when you sift flour to get air through it?) then pour the wine either into a nice jug or decanter or put it back into the bottle (make sure that you check you haven't dripped down the label). If you're having a few friends around use a boxed wine - do as I said above and then put the wine into nice jugs along the table .If it's white you could chill the jugs first in the fridge (or freezer if you're rushed).
