It's probably fine, but for the sake of a few pence why risk the anxiety ? Even if it is ok you'll spend the next few hours after eating it wondering if it is going to upset you.
Incidentally, take vacuum-packed ready cooked ham for example. I have a packet in my fridge, Use By 04 Jul. This means it has a fridge life of at least another 8 days. What is going to happen to it on Day 9, Day 10. Is it suddenly going to breed bugs ? I'll bet the supermarkets build a large safety factor into use-bys, and I'll bet your humous is ok, but I'd give it to the cat.
