I like braised lamb kidney and always core them before cooking, because my late mother used to. Is this the correct procedure or is the core edible and/or tasty?

You should always core a kidney, it won't hurt you but it is bitter and tastes awful.
Niced to see someone else eating offal.
And the core is really stringy, not sure if you could chew it into smaller peices. I always core kidneys just like my mum showed me. If you ever go to a butcher then ask them too, our local butcher is extremely knowledgable and can tell you how to prepare and cook everything.
Yes, definitely core them, very easy to do with kitchen scissors. Like amonty says, it's good to see that other people are eating offal, I simply adore kidneys...which reminds me that I've not had any for a while now....!

Thanks for all your answers, sadly the younger generation probably haven't tasted the delight of liver, kidney, tripe and onions or chitterlings and as it's uneconomical to buy and prepare and cook for one I reckon it's a dieing gastronomic treat. Once again thanks.
