The metal should be non-toxic, have a low electropositivity or should form a passivation layer on the surface (eg. aluminium oxide on aluminium)
The metal should be inexpensive and easy to form into cans.
Tin-plated steel and aluminium are good contenders.
They also need to be rigid enough so that supermarkets can stack them high but not so tough that customers can't open them with a standard tin opener.

They also need to be cheap to manufacture and easy to recycle is good too
