Why is Bubble & Squeak so called and could you tell me the correct way of making it. I use mash and cabbage, my brother thinks it should be mash and brussels... any ideas ?

I thought it was all the leftovers from the Suday Roast, and by all, I mean all. Stuffing, meat, spuds and all the veg.

Bound together with a little egg and shallow fried in to patties.
Shadow Man is right up to a point. It is all the leftovers but I remember that the cold meat was put on the plate alongside the B & S.

I think it's called bubble and sqeak because of the cooking action and noise which comes from the frypan whilst you are cooking it.

I now mash up all left over veg; bind them together with a good full tablespoonful of mayo and a tsp of mixed dried herbs and put the concoction in the micro for five mins. Tastes good with cold meat.......Ron.
Definitely left overs so it depends on the time of year what veg gets thrown in

A way of doing it a bit cheffy, but also convenient is to heat up oil in a casserole dish in a very hot oven and then throw the mixture into the casserole, pop on the lid and leave in the oven, This uses less fat, you don't have to stand over it in the pan, and if you use ramekins when you have friends round each get an individual portion that looks good.
B & S is named after the sound it makes while you cook it - supposedly! Pre-cooked leftover mashed potato and spring greens or sprouts, mixed up together and fried until crisp and brown on the outside. Wonderful - one of the best things about English winters.
fry some bacon and onion cut up fairly small and then add to mash & cabbage before cooking, really nice, but I think originally bubble & squeak was any left overs from Sunday roast and served with cold meat also from left over from previous dayand pickle.
When I lived in Dubai we used to have a bubble & squeak party for ex-pats and once a month have egg & chips just to remind us that one day all the good living would come to an end.Believe me it tasted real good.
