1 1/2 cups dry black-eyed peas
1 pound ham hocks
1 onion, chopped
1/2 teaspoon crushed red pepper flakes
salt and pepper to taste
4 cups water
1 1/2 cups long-grain white rice
1 cup shredded smoked Cheddar cheese
Metric:
250 g dry black-eyed peas
455 g ham hocks
1 onion, chopped
2 g crushed red pepper flakes
salt and pepper to taste
950 ml water
280 g long-grain white rice
115 g shredded smoked Cheddar cheese
In a large pot place the peas, ham hock, onion, red pepper, salt and pepper. Cover with water and bring to a boil.
Reduce heat to medium-low and cook for 1 1/2 hours.
Remove ham hock and cut meat into pieces. Return meat to pot.
Stir in the rice, cover and cook until rice is tender, about 20 to 25 minutes. Season to taste with salt and pepper.
Sprinkle shredded cheese over top, if desired.

6 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1 1/2 teaspoons ground cumin
tortilla chips

beryllium honey - I am glad you liked it!!! I had it in a Mexican restaurant years ago and decided to make it at home. I love it too - although I put in more onion and cilantro in mine because I like it better that way - and after it stays in the fridge overnight so the flavors blend it is even better!!! Even people who don't like black eyed peas like it :)
