� small onion, finely chopped and saut�d for a few minutes in a little oil or butter, then allowed to cool (if it's too hot it might kill the yeast)
2 tsp yeast
500g strong white flour
1 tbsp sugar
150g strong cheddar, grated
2 tsp salt
1 tsp mustard (wholegrain is nice, or just use dry)
300ml water
NB The onion and mustard are both optional but they give the bread a nice little extra *something*. If you want, you can add another 25g grated cheddar to the top of the bread about 3/4 hour before the end of cooking.
