I am a vegi, but 2 of my sons are meat eaters. So got them some sausages. Anyone know any easy recipes to use them in.

For more on marking an answer as the "Best Answer", please visit our FAQ.i make a sausage casserole regularly, with loads of veg in. lay the sausages on top of the veg (i use whatever i happen to have in, but always include onions and carrots) and pour a packet of sausage casserole mix over it, sometimes a tin of tomatoes too, or an oxo cube. you could do a seperate small one for yourself at the same time, omitting the sausages of course!
cook the sausages in the oven and cut into bite sized pieces.
lightly fry a medium diced onion in a little butter until soft and stir in a rounded dessert spoon of flour.
add a large can of baked beans and 1/4 pint of beef stock.
when the mixture thickens place in a casserole dish and top with mashed potato and grated cheese.
Bake in a moderate oven until the cheese is golden brown
- Posh bangers mash and beans!

Or remove the skin, cut each sausage into 4, roll in floured hands and ta-da! - meat balls......
Or use the meat to make Scotch eggs
Or cut into pieces and make kebabs - just add veg, brush wilth oils, season and grill.
Crumb the meats as above - and use to stuff peppers, aubergine, giant tomato or to top portobello mushroom, with a bit of added goats cheese and herbs.
Add to a proper jambalaya - rice, veg, sausage....
Use in goulash, chilli, add cooked to spicy rice.....
Or a nice Italian sausage stew is easy:
brown sausages, place in casserole with red wine, stock, strong herbs - bay, oregano, thyme etc, some mixed beans, can of chopped tomato and some pasta shapes - fusilli, shells or whatever - and cook gently. Thicken with cornflour of you like, before serving with huge chunks of fresh warm bread and a bucket of your favourite red wine - or a good beer.....
Good for game sausages like venison or wild boar, as well as your regular style....
