cheese sauce

can anyone please recommend a way to make cheese sauce without using the roux method ie butter and flour? not going to be going to shops now either so cant buy a ready made one.

Have you got any cornflour? Won't be quite the same, but warm milk to almost boiling, stir in cornflour (that has had cold milk added and mixed in), bring to boil, simmer for few minutes, add cheese and that's it.
Oops and season of course, soz.
I use the all in one method (have done for years) - takes a little time but no roux! make sure you whisk it often to stop it from sticking at the bottom of the pan.

after you've made the sauce, just stir in the cheese to taste & season

Here's how I make it. Put they flour and some milk in a airtight container. Shake. Pour into a pyrex jug and fill to half pint with milk and put a knob of butter in. Microwave for 2 mins, stir, microwave for another 2 mins, checking that it doesn't bubble over. Remove from microwave, stir add seasoning (salt, pepper, cayene, mustard powder) then add grated cheese. The heat of the white sauce will melt the cheese.

Been doing it like that for years and never had a lump or burnt a pan!!

What do you need to sauce for. You can mix egg with grated cheese and grill or bake for a saucy effect. I have never used this for cooking in a saucepan but I suppose it is not that different to a savoury egg custard.
I must try hyppyhoppy's method as an alternative to gallapunk's; which is basically the way I do it. However,in addition to normal seasoning (salt & pepper) I put in some mustard and garlic granules and sometimes use a blue cheese........Ron.
Just put all the ingredients in the saucepan , put in on a low heat and use a bubble whisk until its the thickness you want ....one of Delias gems ..so easy...
what about like a fondue? you will need a glass of white wine or cider, or perry. grate your cheese, heat the liquid in a (preferably non stick) sauce pan and add the cheese handfuls at a time. once cheese has melted, add your cornflour/water mix. i like to add a bit of mustard too.
I'm with gallapunk. Use cornflour method for lasagne and macaroni too.

thank you everyone for your help, i used the cornflour method in the end, i was trying to avoid butter as im trying to cut down, i did use half fat cheese as a compromise here too.
