Can I be cheeky and ask you to let me know what its like when you have made something with it? I've never tried one but I keep picking them up in the supermarket thinking about buying one lol

I too have recently got into Butternut Squash, after finding a recipe in the supplement magazine of a newspaper.
Layer Sliced/Peeled Squash with sliced Potatoe. Bake in covered in the oven until the potaote and squash is soft. Pour in a couple of tablespoons of Double cream, and spinkle with Gruyere Cheese - you can also lay a couple of sages leafs on it. Bake again until cheese is melted and cripsy. - Serve with you main meal.
We have slightly adapted it by using Milk, instead of double cream, and just using normal cheese.
Tip - don't add too much cream/milk or it gets too soggy.
Enjoy!

Cut it in half lengthways and scoop out the seeds.
Place the 2 halves on a baking tray (skin side down), drizzle with olive oil & stick in the oven for 45 mins.
I like to buy Ainsley Harriots fruity couscous which takes 2 minutes to cook.
When the squash is done, fill the hollowed out bits with couscous & serve.

Cut it in two length wise, remove seeds, lay in a baking dish cavity side up, leaving skin on. Fill cavities with a nice chunk of butter and brown sugar. The butter should be at least 1 heaping tablespoon. A little nutmeg and/or cinnamon and bake at 350 degrees F (I'm in the U.S.) until tender, about an hour... Remove and gently work the flesh into the sugar/butter mixture... serve warm.
