'Jump' has meant 'to have sex' since the 1930s - for pretty obvious reasons - and 'the bones' has meant 'the whole body' for centuries. Putting the two together just makes the idea more emphatic. As to the first time anyone did put the two together, I'd guess it would be sometime post World War II.
