Parmesan cheese.

I have just bought a piece of fresh parmesan cheese. How should I be storing it to keep it from going dry?

Wrap in cling film AND foil and store in the fridge. It will last ages. Alternatively you can wrap it and freeze it and just use it when you need it.
I usually grate my parmesan blocks in my food processor (I buy a large block every month) and store it in my freezer in a tupperware box. If you don't wish to freeze it, then wrap it in some cling film but make sure you use it asap. I've not tried cling film and foil (as Abbie suggests) but that has to be worth a go !

Funnily enough, I have wrapped it in cling and foil! So I shall see how it goes.

Never thought about freezing it ready grated, might try that too. I could do it in small quantities that would be used in one go.

I'm the only one here who eats it! I know I need to get a reasonably sized piece to get value, hence the question!!!
I can remember reading somewhere, it's more expensive than fillet steak!
