salads

hi me and my partner have starteds eating more salads but wold like some different ideas so we dont get board of eating it. tonight we have had
lettuce, cucumber, tomato, spring onion. coleslaw. beetroot. pork pie, cold meat and cheese
can anyone think of other things we could have with saladso we can keep swapping some of the foods.

When we have salad it is mainly cold meats to, but also we have a slice of cold quiche (which we buy from the deli when we get the meat), also some nice french bread with cream cheese and smoked salmon on.
One of my faves is jacket potato, and have a bowl of chese, bowl of tuna, and serve it with a nice salad.
Umm Greek salad maybe? We have the usual and add feta cheese, red onion and my other half has olives in his!

chopped peppers, radish, grated carrot all add lovely colour to a salad. celery , apple, or a handfull of peanuts add a nice crunch
pickled onions, red cabbage, and beetroot are a handy store cupboard standby

sometimes I buy a hot ready cooked chicken from the supermarket
...a secret to a good salad is to make it look pretty, slice and chop up your veg into different shapes, this way you don't get bored... I even make little radish flowers, and curl my spring onions and celery fans in iced water to give them a nice curly look...

You can get crunchy things like croutons or sprinkles or fried onion bits or bacon bits for the top! Not too healthy but make a nice change. I also put Blue Dragon sweet chilli dipping sauce over my lettuce and sometimes a bit of houmous. I tend to use lettuce, halved cherry toms, quartered cucumber, cress, grated carrot, onion and sometimes avocado.
in our house we are really into watermelon and feta salad, with mint and olive oil and a splash of lemon juice.
we also make salads with chickpeas, red onion slices chopped cherry tomatoes, olive oil and any herbs you like, but mint and coriander and parsley are specially good, and maybe some spices depending on your palette,like cumin, chilli paprika etc....just experiment. Some salads like this one can last a couple of days and taste better next day. grated carrot, with shallots and garlic, lemon juice and s&p and olice oil....cold pasta, with olives, tomatoes, cold chicken, or rice peas and sweetcorn, couscous with chopped dried fruit and nuts like almonds and apricots........endless concoctions!
