Spinach & Stilton Canneloni
12oz frozen or 1 1/2lb fresh spinach
1oz margarine
4oz Stilton cheese, crumbled
salt + black pepper + nutmeg
Cheddar cheese sauce (made with 1/2 pt milk)
8 canneloni tubes (no pre-cooking required)
Allow spinach to defrost, drain + chop. Melt margarine in pan + add spinach and Stilton. Cook gently till cheese has melted. Season with salt, pepper + nutmeg. Fill the tubes, place in ovenproof dish + cover with cheese sauce. Cover with foil + bake in preheated oven 190c for 30 mins
