my kitchen is full of courgettes and marrows due to our lovely wet summer. does anyone have any recipes for using them up, soups? or baked? or anything else? ideas gratefully received LL

Courgettes are nice chopped up and fried in garlic butter.

Either that or slice them in half lengthwise, set them on a baking tray facing up and cover in grated parmesan. Then bake them til they're mushy - gorgeous!
Slice the courgettes up, add them to tinned plum tomatoes, stir in some crushed garlic and lots of black pepper

I have made marrow and ginger jam with giant yellow courgettes. Sound horrible, but is actually very good.

cover chopped up chunks of courgettes in fajita seasoning then put them in a frying pan and cook til softened

drizzle honey over them then bake them in the oven just like honey roast parsnips
