Good Christmas Cake Recipe.

Does anyone have a tried and tested Christmas cake recipe? Preferable one that has been used!!!! I have checked all the sites (Delia etc etc) but there's nothing better than any recipe that has acually been made... Also, how long will it keep before Icing it etc. Thanks x x

Hi debbz!
This is an unusual choice of ingredients, but it makes a lovely moist rich fruit cake! This is the one I make.
8oz S.R flour
5oz butter
4oz castor sugar
2 large or 3 medium eggs
3oz cherries
1lb jar of good quality mincemeat
Cream the butter & sugar. Mix eggs in with a little of the flour. Add cherries. Mix remainder of flour gradually & add the mincemeat. 7/ 8 in cake tin. Gas mark 3/ 170c for 1 and a quarter hours to one and a half hours or firm to the touch. Simple! xxx
