Does anyone know a vegetarian substitute for suet in mincemeat (Mince Pies). Thanks

Soak your dried fruit in some liqueur (rum or brandy for example or even beer), add some brown sugar, lemon and orange juice (from freshly squeezed fruit), nutmeg, mixed spice and candied peel as well some very cold thin slivers of butter - this needs to be done in advance to give the fruit time to absorb all the flavours.
