Cake ideas for a Local Farmers Market

This Saturday i am holding a cake stall at the local farmers market, I am just after some extra ideas/recipes that are relitively easy to make and delicious!!

Coffee and walnut cake with butter icing in the
middle .
Carrot cake
Any type of sponge cake .

Don't forget flapjacks for the people who have wheat allergies and add dried fruit especially cranberries for this time of year.

What about coconut haystacks they sell in a flash. First thing I baked at school (still have the egg cup I used!)

Thanks all! Nice ideas, i have taken the recipe for Melting Moments and am just about to search for a carrot cake recipe! Yum. The market is in Solihull.

How about some puff pastry mince pies for a Christmas theme.

Some mini Christmas puddings with a cold brandy sauce topping.

A chocolate or chocolate topped cake, preferably dark chocolate with mini mandarin segments on top and dark chocolate shavings.

oh you have to make some banana bread and banana and choc chip cookies they are so good and the bread once tried will be gone in no time.
