1 1/2-2lbs beef mince
2 sticks 0f celery-diced
1large carrot-diced
2 med onion-chopped
2 fat cloves garlic-crushed and chopped
2 tins chopped tomatoes
2tablespoons tomato puree or paste
dried oregano+basil....1 tablespoon of each
1/2 cup red wine
1/2 cup milk
olive oil
Saute the onions,carrot and celery in the olive oil til soft,add the garlic and continue to cook for a few min. Add the mince and turn up the heat a bit. Let brown while stirring continuously.
Add the herbs and the tomatoes, and the red wine-bring to
the boil and then reduce to a simmer. Add the milk-a few tablespoons at a time-every 20 min or so.....do not allow to dry out. Let bubble away for about 1hr20 min on the lowest heat. if wanted you may add a beef stock cube. If the tomato paste makes it bitter,a quarter teaspoon or less of sugar will help.
