Has anyone got a good recipe for a stilton tart with either leek or asparagus? Many thanks

leek & stilton tarts serves 4
25g butter
1 large leek trimmed,finely sliced
salt,ground black pepper
1/2 teaspoon ground nutmeg
1x375 pack ready rolled puff pastry
100g stilton crumbled
1 egg beaten
salad leaves to serve

1.Pre heat oven to 200C.Melt butter in small pan,add leek ,cover and cook on very low heat for about 10 mins til soft.season with salt,pepper and nutmeg.
2.Meanwhile roll out pastry a little thinner and cut out 4 circles using a saucer.Place on baking tray and chill while leek cooks
3.Divide cooked leek between pastry circles and top with crumbled cheese.Brush edges of pastry with beaten egg and cook in centre of oven for 12-15 mins,until pastry is golden and cheese is melting
4.Serve warm with salad leaves

I suppose you could just make one large tart if you prefer.

Thanks hjburton for the recipe. I wanted individual tartlets as a starter for xmas day. I had a practice without a recipe and it turned out more like a quiche and was not very tasty. I think more cheese and no egg/milk mixture is the key. I also used shortcrust in tart tins, your way sounds better and quicker. I'll give it a go again. Again many thanks.
hi flopsy I,ve done these lots of times for a starter and they allways turn out well and are very popular.enjoy christmas lunch

Thanks for that info, I havent had a chance to try it out yet, I have had to make some double chocolate chip muffins and mince pies for hubby to take to work tomorrow, as he is the only one who has not turned up in the last week with a selection of his wife's baking. They wont be able to say now that he has eaten plenty but brought nothing in return!
