I've just grilled a couple of peppers and skinned them to have in a mixed salad plate for lunch tomorrow and Friday. There's too much for these two days, if I freeze them can I still use them in a salad or would it better to cook with them? I've never had to do this before as I usually eat them all!

If you have a spare jar..or any good food storage container...put them in there with some olive oil,a clove or two of crushed garlic, and some herbs such as Basil and oregano. They will keep for a week or two.

It seems to me ,,if you freeze the peppers they are going to get very cold arent they ? and there you will be with Egg upon your face you NINNY BUT then perhaps you could make Peppers upon Eggs
That ^^^^ wasn't very helpful.......it WAS a sensible question.
Great suggestion from pasta freak. If you freeze them they will probably be a bit 'yucky' for a salad but will be fine for cooking with or adding to casseroles etc.

Thank you pastafreak & warpig (what's up with charlie???) that's what I thought about freezing them and as we're on a low fat diet didn't want to put them into olive oil but I wonder if I can add some vinegar to preserve them till next week. What do you think?
