In about 2/3 of a saucepan of boiling water, place some chicken joints (or a chicken carcass left over from a roast), a peeled onion (cut in half), a carrot (peeled and sliced), 2 sticks of celery (chopped) and a handful of fresh mixed herbs (e.g thyme, sage, parsley, bay leaf). Bring back to the boil and simmer for about an hour and a half.
Let it cool a bit and strain out all the solids then skim off any fat.
Season to taste with sea salt and freshly ground pepper.
If you let it set like jelly it is good as well, with toast.
