If cucumber is a MUST in your soup....just look at the link that Rollo sent you earlier and cook baby cook........

but why has to be a cucumber and ingredients!............................do a mulligatawney!( lovely) or a nice homemade tomato with cheese sprinkles!

Iced Cucumber Soup :

liquidise a peeled cucumber and mix with finely chopped spring onion and soured cream (or you could use creme fraiche, or yoghurt, or a combination of these - experiment to find the combination you like best). Season with salt and white pepper and garnish with some chopped mint. Serve well chilled.

A wonderful summer soup (I think it originally came from abook by Marika Hanbury-Tenison).
