We buy our potatos directly from them in 50 or 100 pound burlap sacks. Their cellar is a series of low, well insulated buildings that maintain on average, about 45 degrees (F). Don't wash the ones you intend to keep... you can brush the excess dirt off, but try not to damage the skins. Put them in a well ventilated container, such as the mentioned burlap, but cheese cloth works well to. Hang them somewhere in your basement to afford air circulation and try to keep them as cool and dark as possible. Barring a basement, you can keep them anywhere that won't freeze over winter...
Best of luck!
