Gas or Electric oven?

Hello all.
My wife and I are looking for a new cooker. We would like to stick with a gas hob, though we are considering maybe a dual fuel cooker with electric oven.
Can anyone advise whether gas or electric ovens are best, and what are the pro's and cons of each?

For more on marking an answer as the "Best Answer", please visit our FAQ.Until recently I'd always had a gas hob as I liked the instant heat control....however I now have a Bosch ceramic hob which I love......the heat control is just as quick as gas but it's so much easier to keep clean.
Same applies to the oven.....I find the new fan assisted ovens better than my old gas one.

My experience is that gas ovens tend to have a higher humidity due to the burning gas this makes some things like merangues difficult to cook and pizzas less crisp.
However they seem to heat up much quicker than electric.
Having said that some of this was quite a while ago so more up to date kit might have fixed the problems

Gas ovens produce water from the flame, so don't dry stuff out so much.
Gas ovens provide a temperature gradient - they're hotter at the top than the bottom, which can be useful for cooking 2 things that need slightly different temperatures.
Electric fan ovens are the same temperature at the top and bottom (though electric conventional ovens are like gas).
Electric ovens have a more stable temperature, and if you get a good one, more modes - you can have conventional, fan assisted, bottom heat only, alternated top heat and fan, steam injectors, etc - but it depends what you cook - if you only use it to heat up ready meals, for instance, then the extra features (expensive) are of no use - if you want to cook a good Souffle, you need bottom heat only.
