Paella

Has anyone got a good recipe for Paella, I've tried several times to make this but somehow its just not right, don't suggest mussles as they don't like me.
Any tried and tested out there?

Arroz bomba is the best rice, but most supermarkets will sell "paella rice."
Finely mince some garlic and gently fry in the paella. Add the rice and stir until completely coated in the oil. Add the fish stock and when it's all absorbed, add your fresh fish (I use jumbo prawns, chunks of salmon fillet and sliced baby calamaries) and cover with foil for 5 minutes, or until all the fish is cooked. The calamari should go in last and only needs literally a minute to cook. Any longer and it will be rubbery.

The problem with suggesting a recipe for paella is that it's more of a 'style of cooking' than an actual dish. You can put almost anything you like in it. If I make it, I usually 'make it up as I go along'. However, this recipe is incredibly simple and ought to be a good starting point:

(Take a look at the comments. Someone suggested that it would benefit from the addition of chorizo. That sounds good to me!).

I might be a bit of a philistine but I love paella with drier rice over what I assume is the more traditional way, the more "sludgy", risotto like version in tapas restaurants over here.
I'm not a bit seafood fan either though love prawns as long as they are well cooked.
I should probably just call mine yellow rice with prawns and other nice stuff as I don't suppose it's proper paella :)
