Please can anyone tell me the best way to make the traditional east end Liquor that goes with pie and mash.I know this is a big secret with the various shops that serve it,but there must be a way to find out, other than me trying all sorts of combinations, and not really getting it just like they do.Any ideas would be greatly appreciated, many thanks..............

as I recall its a cornflour and water mixture, seasoned with salt and white pepper and truly massive amounts of chopped fresh parsley

scroll down the page for this recipe which uses flour and vinegar as well

It's basically a parsley sauce but the secret ingredient is the water used to make the sauce is the water that they stew the eels in. This is why it never tastes the same when homemade.

I don't believe it, guess what my husband made for me tonight - yes home made Pie, Mash & Liquor!

Sainsbury Minced Beef Individual Pie, Mashed Potato & Liquor (Bisto Parsley Sauce Granules), with vinegar of course! Well it's nearly home made! It's absolutely delish & tastes just like the real thing.

woofgang - have just perused that page - amazing. Pie & Mash, what happy memories.
