i like to cut it into very thin slices (using a potato peeler) add a bit of garlic bit of ginger and some jalapenos lightly fry in olive oil, for a quick healthy snack.
i havent anything particular to go with it..my mum just gave a couple ...im a veggie an doing a low carb diet at the moment so want a few ideas how best to eat it
ive got various other veg too, and cheese so ill probably go for that option
Joko, yes, you could. I add it to salads, or cut in sticks and munch away, and take it to work to nibble on. You could also cut it flat along its length and add a pinch of salt and pepper and grill it. This makes a delicious sandwich filling.
I grow some in the garden in summer. I just top n tail them, thinly slice them lengthways, brush with olive oil and then add salt and pepper then grill for a few minutes.
I sometimes grate it up with grated carrot and mixed into a salad OR
Dice it up and add to a tin of cherry tomatoes and heat through OR
Grate it into an overproof dish, add a knob of garlic butter. Cover with foil and put in oven for about half hour
