Diced Pork - What to cook??
Help!!!
I have diced pork out of the freezer to use for tea and dont know what to do with it! My brother is coming to tea and he doesnt like much veggies other than potatoes, peas, carrots, mushrooms and parsnips (unless they are hidden in a casserole or stew!). My bloke is working late tonight so I need to do something that can be re-heated.
I normally do a stroganoff or a stirfry but am fed up with them! Any suggestions?? Quick and easy but tasty and filling!

Preheat the oven to gas mark 4. Fry pork in a little olive oil with a chopped onion until the onion is brown at the edges and the meat is seared. Add a tablespoon of medium curry powder and fry for another minute. Add one large tin tomatoes, one large tin of butterbeans (drained), and a tablespoon of black treacle. Stir well and bring back to the boil, then casserole for 2-2� hours.
Serve with plain rice and/or steamed vegetables.

Pork Stew
1 lb diced pork
A little flour
1/2 lb smoked bacon cut into
chunks
2 large onions, sliced
1 tbsp vegetable oil
1/2 lb mushrooms
1 can of tinned tomatoes
Dry cider
Soured cream
Bay leaf, 6 cloves
Fry the onion in the oil until browned, now add the bacon and the meat, toss in seasoned flour, and brown these too. Next add the mushrooms, bay leaf, tomatoes and cloves. Just cover with cider and simmer very gently for about 11/2 hours. now season to taste and add the soured cream and serve with baked potatoes.

In the end I did the pork in a honey and wholegrain mustard sauce with mushrooms and parsnip in it (I put parsnip in most things - especially curries!!) together with peas, carrots and mashed potatoes! It seemed to go down well with my bro and heated up well for bloke!
