Lots of people start a vinegar mother which is a vessel into which you can pour wine dregs to keep an endless supply of wine vinegar. Organic vinegars are the best way of starting. Pour the vinegar into a glass and cover with muslin. The vinegar will throw up a film of bacteria and yeasts, which is the vinegar mother. Lift it out of the jug, put it into a crock and feed it with wine dregs. You should keep it covered.
