It's your choice entirely arabica. If you do it yourself, plastic plumbing fittings cost more than copper........... but they're "push-fit"
If you're paying someone, then using plastic should be a little cheaper because of the much reduced labour time.
Also, if plastic freezes, it usually thaws without pipe bursts (it can stretch).

I would have thought the obvious thing is that you couldn't use plastic pipes to carry hot water from a boiler (for instance) But I may be wrong...
