What is meant by the terminology 'When the first/second truss has set?'

A Truss is a branch from the main Stem where the Flowers are, if there is a hint of a Tomato appearing on the last Flower then the Truss is set.

Thanks, I only have flowers at present, no sign of tomatoes emerging

Asking question as not sure when to start feeding them
Start feeding now.
When the flowers start to finish and shrivel up the tomato will start growing from the point at which the petals came from. Best time to start feeding them was when flowers first grew but not to late to feed them now! Always remember to pick out the small new shoots/leaves that appear between forking off branches as they don't do nowt but grow extra leaves that take away energy and goodness from the tomato.

I have a tom plant in a medium to large pot which is in a bright but sheltered corner of the patio. Its doing well but I wonder if I should stop it at a cerain stage. It has 4 trusses so far, would it be wise to pinch the tip out now?
You can pinch it out when you feel it is high enough or has reached the top of a 5` supporting cane. There is no hard and fast rule to the height.

I hope you are feeding it regularly with high potash feed. What size pot is it in?
I have an organic tomato feed which I'm using every other water and the pot is about 10 inches wide. Its doing really well. Its lovely and green, is about 4 feet high and has 4 trusses. I have taken out any shoots in the forks as its grown.
