At present i am looking to buy a 2008 Daihatsu Copen 1.3 Sports, 3,000 miles on the clock, and is being sold by a dealer for almost half of the price of an equivellent non Category Car, the car is down on the HPI Check as stolen recovered, with no damage, as the car was apparently stolen with keys, the car is in N.Ireland, and will be sold without an mot, he seems reluctant to mot her, so will be transported over the water to Scotland, my question [ s ] are A] What if any are the pitfalls, and B] What is the advantage if any ?

Wouldn't touch it.
Without Tax, Mot and Insurance it can be seized and crushed the moment you own it. That's not counting the fines and points on your driving licence.
Leave that sort of car to the Arthur Daley end of the motor trade.
The future of Daihatsu itself is pretty grim:

As it's out of the country .. and a bit of hassle too .. I wouldn't touch it.
Lot of expense involved to park it up outside as a fully UK legal car.

I'm not sure I'd buy a Daihatsu since they are no longer marketed in this country. Admittedly there is still parts & service support...but for how long...and doesn't this situation but a limit on how much a Daihatsu is worth?
A Daihatsu without an MOT too .. ATM.

Methyl- no it can't. You don't need MOT and TAX to insure it- all he has to do is insure it ' off road' and he's legal.
If it's cheap enough then fair enough but I'd want to see it before I bought it.

Went against buying, seller, very reluctant to put a new mot on,
stating it "will sail through, over in Scotland" maybe so, but this
is one Scotsman, that,s not parting with his hard earned, and
as others possibly know, us Scots, like to hold on to our cash... LOL,
cheer,s for all the replies..........
