I've been given a bag of peppers; scotch bonnets, birds eye, Jalapeno. I don't know whether to dry them and if so how, or put them in oil or perhaps a bit of both. I have googled but I'm still unsure. I'd like to hear from somebody who has actually done it! Advice please.
I dry mine by "sewing" thread through the stalks and tying them together. I hang them off a kitchen cupboard and they dry very quickly. I also freeze them, they keep very well and you can use them straight from frozen. :)
I freeze mine. Just put them in a plastic bag in the freezer (to stop freezer burn), take them out and chop them whilst frozen and put them in the dish that you are cooking. I have kept them for a year this way and they remain perfectly useable.
Like Mortartube, I cut my peppers into strips, lay them on a baking tray and freeze. Then I bag them and take them out when I need them. Great for stir fries etc.
