100 g cracked (bulgar) wheat, soaked in hot water for half hour and then drained.
100 g uncooked rice (white, brown, long grain, basmati, whatever), boiled and salted to taste, then drained.
200 g chopped mixed nuts
1 300 g can chickpeas (or mixed beans or your favourite bean) rinsed and drained
Finely chop these raw veg:-
1 large onion (or 1 small white and 1 small red)
1 stick celery
100 g button mushrooms
1 red or green or yellow pepper (or a bit of all 3)
3 cloves garlic (optional, for those nights/days when you just know the vampires will be around)
1 courgette plus any other veg you like or have in the fridge (cooked sweetcorn, cooked green beans, even pureed lentils)
MIx everything together in a large bowl and add 1 large egg or 2 small ones (I like free-range for the colour and taste). If you've got some fresh parsley or basil, chop some up and add (about a handful of each)
Lightly grease a large pyrex dish or other oven-proof container or even two, pile in the goo, smooth the surface over and bake in the oven (Gas 6, 200 deg C) for about 30 to 40 minutes until golden brown.
Serve with lots of lovely veg (steamed broccoli, carrots, greens whatever you like), roast tatties, yorkie puds and my fab veggie gravy (I'll post that recipe in a bit) and ENJOY. I'm getting hungry now !
