Roast beef

Have a 2.5kg silverside beef joint for dinner. It's not my favourite but was on offer. Im going to slow roast it for about 4-5 hours in the oven but wondered if there's anything i can put on it during cooking to enhance the flavours.
For example, i usually brush my lamb with mint jelly and stud it with garlic and rosemary and chicken usually has herbs sprinkled on it. gammon has mustard and brown sugar but not sure if thre's anything i can put on the beef to compliment it.

For more on marking an answer as the "Best Answer", please visit our FAQ.Roughly chop an onion (don't bother peeling), break a large carrot into chinks and ditto some celery - chuck in the bottom of the roasting tin - lay joint on top and add water to cover veg. Turn meat every hour during cooking and if the spirit moves you baste with tin juices.
